When you have only 30 minutes for lunch, can’t order take-out and have to make do with what is left in the refrigerator….

Halloumi Egg Sandwiches

There really isn’t much of by way of recipe. It is just a sandwich after all! But if you ever find yourself faced with a couple of inches of halloumi and several hot dog buns, perhaps experiment a little just play with what you have! How often do we get to play with our food, eh? Mozzarella, cheddar, or any sliced cheese will work, but halloumi is not what most of us would have on hand, which makes it a tad special. Plus it has an exotic ring to it, doesn’t it? ‘Har-loo-mee’, just saying the name might make you think you’re in Greece and who doesn’t want that right about now? Add a fried egg to it and the mix of rich yolk and warmed halloumi with cool cucumber and tomatoes will just melt in the mouth. Oo-la-la!

A few slices of halloumi, tomatoes, cucumbers and a fried egg makes a quick and healthy sandwich.

Serves: 4 sandwiches
Ingredients
  • 4 hot dog buns, sliced partway through the middle and buttered on all sides
  • Halloumi cheese, sliced and lightly brushed with butter
  • Cucumbers, sliced thinly on the diagonal
  • Tomatoes, sliced thinly
  • 2 eggs
Instructions
  1. Lightly toast all sides of the hot dog buns on a skillet till just slightly crisped. Set aside.
  2. Grill halloumi till warmed or slightly browned. Set aside.
  3. Add ½ tsp oil in the skillet and fry the eggs.
  4. Assemble sandwiches in any order! Play with the food!
