  • 4 eggs, beaten
  • 1 tsp pepper
  • ½ tsp turmeric
  • ½ tsp salt
  • 1 large tomato, diced
  • 1 medium red onion, thinly sliced
  1. Soften onions over medium heat. Add tomatoes, salt and turmeric.
  2. Beat eggs with pepper. Add eggs into the pan when tomatoes have softened.
  3. Turn eggs a couple of times, allowing eggs to set a bit between turnings.
Fool-proof, a great starter recipe!

Try it with caramelized onions. Your guests will be pleasantly surprised. Tip: Prepare onions ahead of time and freeze them in ice cube trays. Pop one (or more) into the pan anytime softened onions are called for.
