Soften onions over medium heat. Add tomatoes, salt and turmeric.
Beat eggs with pepper. Add eggs into the pan when tomatoes have softened.
Turn eggs a couple of times, allowing eggs to set a bit between turnings.

Try it with caramelized onions. Your guests will be pleasantly surprised. Tip: Prepare onions ahead of time and freeze them in ice cube trays. Pop one (or more) into the pan anytime softened onions are called for.
