Ethiopian Cabbage

- 1 medium cabbage, roughly chopped
- 3-4 carrots, sliced or chopped
- 2 tomatoes, roughly chopped
- 5 cloves garlic, minced
- 1" ginger, minced
- 1 Tbsp turmeric powder
- 1 Tbsp ground black pepper
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp salt
- Heat 4 Tbsp oil in a large pot or casserole. Sweat onions over medium heat till softened.
- Add garlic and ginger for about 1 minute.
- Add carrots, tomatoes, and salt and cook till carrots just begin to soften.
- Add remaining spices - turmeric, black pepper, cumin and paprika. Stir well. Add ¼ cup water and simmer for 15 minutes.
- Add cabbage and simmer for another 10-15 minutes.
Bell peppers, okra or potatoes can be added too. Cabbage should be added last.
