Easy Gajar Halwa

An easy version of a traditional Indian dessert.

Ingredients
  • 2.2 lb /1 kg carrots, shredded
  • 5 Tbsp clarified butter
  • 11/2 tsp cardamom powder
  • ½ can sweetened condensed milk
  • 1 cup almonds, chopped
  • ½ cup cashews, chopped
  • ½ cup raisins (I did not add it this time)
Instructions
  1. Grate carrots. See notes for more information.
  2. Heat clarified butter in a heavy pan. Add grated carrots and stir constantly till carrots are very tender.
  3. Add condensed milk and stir well. The mixture will appear to liquefy slightly.
  4. Add cardamom powder, chopped nuts and raisins.
  5. Lower heat to medium and keep stirring till liquid has evaporated and carrots are mostly dry.
  6. Add sugar if desired.
  7. Serve warm or chilled.
Notes
I used medium-sized holes to grate the carrots. I was able to make out some of the carrots while eating it. Great for texture. However, the next time I will use a finer hole for a smoother end product.
